Favorite Pancakes

I was asked to share this recipe which was originally posted 11 years ago (to the day) on my long since defunct blog. I took some time to recreate it as it looked when first published, albeit with some formatting and spelling updates.

For those of you who are Christian, you should be aware that today is Shrove Tuesday. Today officially starts the beginning of Lent.

For the rest of us however, today is Mardi Gras! Fat Tuesday! Paczki Day! Or, in the Barker household, PANCAKE DAY!!!

Ever since I was a little kid, it has been a tradition is my family to make pancakes on Fat Tuesday. I can remember watching my Dad make the batter for the pancakes as my Mom put mini-sausage in the oven.

In honour of this tradition, I would like to share with you my family’s recipe for our delicious pancakes:

Favorite Pancakes

  • 1¼ cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 beaten egg
  • 1 cup milk*
  • 2 tablespoons salad oil

Sift together dry ingredients. Combine egg, milk, and salad oil; add to dry ingredients, stirring just til moistened. Bake on hot griddle. Makes about 12 dollar-size, or eight 4-inch pancakes.

*For thinner pancakes, add 2 tablespoons milk to batter

As an extra step, we like to add an over-ripe banana to our recipe. From my experience with this recipe, adding fruit or chocolate chips (about half a cup) usually makes a good addition. I had some luck with peanut butter (about 1tbs per batch) a few years back. Don’t add honey though, it’s a bad thing.
